Healthy Banana Bread

This is how you put your over-ripe bananas to good use, with my healthy banana bread!

I absolutely LOVE this healthier banana bread’s moist texture and humble flavor. Banana bread is meant to form a crack down the center as it is baking, this is a sign that the bicarb is doing its job. Have it toasted with lactose free- cream cheese/ yogurt, or with no salt/sugar added peanut butter.

Ingredients

2 cups gluten free cake flour

3/4 teaspoon bicarbonate of soda

1/2 teaspoon salt

1/4 cup honey

1/4 cup butter, softened

2 large eggs

3 over-ripe bananas mashed

1/3 cup plain lactose-free yogurt

1 teaspoon vanilla essence

Non stick spray

Preparation

Preheat oven to 180°

Sift together flour, bicarb and salt.

Place honey & butter in a large bowl and beat with a mixer at medium speed until well blended (app. 1 minute).

Add the eggs, 1 at a time, making sure you beat the mix well after each addition.

Add banana, yogurt, and vanilla; beat until blended.

Add flour mixture and beat at a low speed just until evenly mixed.

Spoon the batter into your loaf pan coated with cooking spray.

Bake at 180° for 1 hour or until a toothpick inserted in the center comes out clean.

Cool 10 minutes inside the pan; remove from pan. Cool completely on wire rack

Upgrade it

*Berry it – Fold 1 cup fresh blueberries into batter. Bake as directed.

*French toast it – Cut bread into thickish slices. Toast until slightly crisp on both sides. Whisk together 2 eggs, 2 tablespoons of milk, cinnamon and nutmeg to taste, along with a pinch of salt in a bowl. Dip your bread into the mixture, let excess drip off and fry in a nonstick pan lightly coated with your choice of oil over medium-high heat,turning once.

*Choc-chip it – Fold 1 cup dark chocolate chips into the batter and bake as directed.

*Streusel it –  Combine 2 tablespoons of rolled oats, 2 tablespoons wholeweat flour, 1 tablespoon brown sugar, 1 tablespoon melted butter and 1/4 tsp. ground nutmeg in a bowl. Divide batter into 12 paper-lined muffin cups. Top with streusel. Bake at 180°C until done (about 25 minutes)

As a single mother at 21 who weighed 134kg, at the age of 25 I finally decided to take control of my weight and my life. This led me down the road to health. It was a long, confusing journey that proved to be quite challenging with no help, knowledge or support system for that matter.

To date I am a qualified personal trainer, sports nutritionist, child nutritionist and mesotherapist and the journey to knowledge has only just begun.
Someone once said: “You give a man a fish and you feed him for a day. You teach him how to fish and you give him a skill that will feed him for a lifetime.” Health and wellness is not a fish, it’s the skill set to be a fisherman.
